So, let's say I have Gideon Jura. And then I Spark Double him. Both Gideon and the copy then use their +2 first ability. Is the result that creatures my opponents control simply can't attack unless they remove a Gideon somehow, or that they can choose which Gideon to attack?

The latter.

Each creature your opponents control has two requirements to attack on them, but it’s impossible for them to attack both Gideons at once, but they still need to obey as many requirements as possible, meaning that each creature that can attack has to attack one of your Gideons.

Hi! So I have Guardian Project on the battlefield, along with a creature, Paradise Druid. No cards on any graveyard, no other creatures on the battlefield. I cast Spark Double, targeting the Druid. Will Guardian Project trigger? Thanks!

No, it won’t.

Spark Double will enter the battlefield as a Paradise Druid in every way, including its name. Since it has the same name as another creature you control, Guardian Project’s secondary condition won’t be satisfied and it won’t trigger.

If I control a keranos and have 6 devotion to ur, can I then play a spark double copying keranos? Which takes effect first, keranos becoming a creature or deciding what spark double enters as?

Spark Double won’t yet be on the battlefield when you choose what it’s going to copy. Since it’s not yet on the battlefield, it’s not yet providing any devotion and and such you won’t be able to choose Keranos for it to copy.
