Ingredients: 8 large carrots, peeled and trimmed. 8 slices of bacon. 1/4 cup maple syrup. 1 tablespoon chipotle peppers in adobo sauce, minced. 1 tablespoon olive oil. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Preheat your oven to 400F 200C. In a small bowl, mix the maple syrup and minced chipotle peppers. Set aside. Wrap each carrot with a slice of bacon, securing it with toothpicks if needed. Place the bacon-wrapped carrots on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast the carrots in the preheated oven for 20-25 minutes or until the bacon is crispy and the carrots are tender. During the last 5 minutes of roasting, brush the chipotle maple syrup mixture over the carrots, allowing it to caramelize. Remove from the oven and let them cool slightly.
