I went to a tearoom called Alain Batt, which is also the name of a great chocolaterie, here in Nancy.
I ordered a sort of a very airy cheesecake. Not too sweet, very light, just perfect for a tea room.
It goes very well with a small coffee, accompanied by a bergamot, Nancy's precious sweet.
The balance between the three of them made the teatime just perfect.
"Those who can't do teach" was once a common saying, but I'm glad to be rid of it.
Because teaching is a real skill that involves a type of patience and understanding that the doers of their field might lack.
You can be exceedingly phenomenal in your specialty, and fail gloriously to explain it well to someone else. It happens all the time, and credit needs to be handed to the people that are stellar at teaching a concept, not just understanding and applying it.
