This is the perfect cake for this time of the year! Speculaas is a Dutch cookie that is one of those traditional foods we eat when it's cold outside. Now, I know you probably won't be able to find speculaas spice (also known as koekkruiden) abroad, but I've done some googling and I think this cake will also be wonderful if you use mixed spice or pumpkin pie spice, because they seem to be very similar. You could also make your own speculaaskruiden, Google has plenty of recipes!
Speculaascake
Ingredients:
200 grams butter (room temperature) 200 grams brown caster sugar 4 eggs 200 grams self-rising flour 4 tea spoons speculaas spice
1. Pre-heat the oven at 160 °C and grease a cake tin.
2. Mix the butter with the sugar and a pinch of salt for 15 minutes until it's become smooth and fluffy, then beat in the eggs one by one.
3. Sift the flour and spice together above the butter mixture and carefully mix it together.
4. Pour the batter into your tin and bake the cake for about 50 minutes. Check with a skewer! Mine needed a bit longer than was indicated.
