I like spicy eggplant (鱼香茄子), where the eggplant soaks up all the rich flavor of the spicy meat sauce.

I finally figured out how to preserve the eggplant’s vibrant color and make it less oily—even after deep frying. (Hooray!)

Eggplant with spicy garlic sauce was simply delicious and easy to cook last night. I prepared 5 pieces of eggplant, cut lengthways,1 tsbp. each of chopped garlic,ginger,red pepper(hot),green onion or scallion,soy sauce,balsamic vinegar and 1 tsp.of brown sugar,salt and pepper.Sautee the eggplant first in one 1 tbsp.vegetable oil and follow with all the other ingredients,don't overcook it.then it's done
