I made indian food tonight. This is the best I have EVER made. Because I love all of you I will share what I did.

2 lbs boneless skinless chicken thighs rough diced.

2 to 3 Tablespoons of olive oil.

1 large sweet onion large diced

2 cans diced tomatoes

1 can crushed tomatoes

3 to 4 small potatoes diced (2 cups worth) I used Yukon's, skin on.

Half a head of cauliflower, trimmed and cut down into bit sized pieces

1 teaspoon salt (more to taste preference)

Grind a bunch of black pepper into it.

1 Tablespoon Penzy's Rogan Josh seasoning. (Go on penzy's website. I stand behind their quality and prices. AMAZING STUFF)

1 Tablespoon Penzy's "Now Curry" (again I stand behind their products. Out of Wisconsin I believe)

1/2 teaspoon ground garlic powder

1/3 cup heavy whipping cream.

3 tablespoons butter

1/3 cup stemmed fresh parsley chopped to shreds (or as small as your patience will let you)

Ok... here we go

Drop the olive oil into a large fry pan or wide pot over high heat. Let it get all hot and shimmery.

Dump the chicken into it and let it fry for a minute or so and then start stirring.

When the chicken doesn't look raw, drop in the onion and cook it until the onion is semi translucent. Add the spices-R.Josh, Curry, garlic powder and stir it all together till it looks well mixed.

Add the tomatoes. Stir until it starts bubbling. Lower the heat to medium like a good simmer.

Add the potatoes. Stir and let sit till they lose their raw white edge. Maybe 5 minutes.

Add the cauliflower. Monitor and stir for 5 minutes till the cauliflower doesn't look fresh/raw.

Add the butter and stir until incorporated.

Increase the heat and add the heavy cream. Stir until a good boil/saute and drop the heat to low.

Add the parsley, stir, and let simmer until your rice is done.
