A vibrant and flavorful twist on the classic Banh Mi sandwich, featuring a rainbow of fresh vegetables and a spicy pepper sauce.
Ingredients: 1 baguette. 1 large carrot, julienned. 1 large cucumber, thinly sliced. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 purple cabbage, thinly sliced. 1 cup pickled daikon and carrot do chua. 1/2 cup fresh cilantro leaves. 1/4 cup mayonnaise. 1 tablespoon sriracha sauce. 1 tablespoon soy sauce. 1 tablespoon rice vinegar. 1 teaspoon sugar. Salt and pepper to taste.
Instructions: Cut the baguette down the middle, leaving one side open. To make the sauce, put together soy sauce, fish sauce, rice vinegar, sugar, salt, and pepper in a bowl. Cover both sides of the baguette with the sauce. On one side of the baguette, put the thinly sliced carrot, red and yellow bell peppers, purple cabbage, and pickled daikon and carrot. Put cilantro leaves on top of the vegetables. Close the sandwich up and press it down gently. Cut the sandwich into pieces that you want. Serve and have fun!
