Ingredients: 1 1/2 cups chocolate graham cracker crumbs. 1/2 cup unsalted butter, melted. 1/4 cup granulated sugar. 1 1/2 cups semisweet chocolate chips. 1/4 cup brewed espresso or strong coffee, cooled. 3 tablespoons coffee liqueur e.g., Kahla. 2 cups heavy cream. 1/2 cup powdered sugar. 1 teaspoon vanilla extract. 1 envelope unflavored gelatin. 3 tablespoons cold water. 1/4 cup hot water. Cocoa powder, for dusting optional. Chocolate shavings, for garnish optional.
Instructions: Start by heating the oven to 350F 175C. Put the chocolate graham cracker crumbs, melted butter, and granulated sugar in a bowl and mix them together until they are well mixed. This mixture will make the crust. Press it firmly into the bottom of a 9x13-inch 23x33 cm baking pan. Once the oven is hot, put the crust in for 10 minutes. Then take it out and let it cool completely. Put the semisweet chocolate chips in a bowl that can go in the microwave. Melt them in 30-second increments, stirring between each one until the mixture is smooth. Add the strong coffee or espresso and coffee liqueur to the melted chocolate and mix them together. Put away. Mix the powdered sugar, vanilla extract, and heavy cream in a different bowl. Whip them together until stiff peaks form. Place in the fridge until needed. Put cold water in a small bowl and sprinkle the plain gelatin over it. Let it sit for a few minutes to bloom. After that, add the hot water and stir it in until all of the gelatin is gone. Mix the gelatin mixture into the chocolate mixture slowly while whisking it in. Fold the whipped cream into the chocolate mixture slowly until there are no more streaks. Pour the mousse mix over the crust that has been set in the baking pan and make sure the top is smooth. Put the bars in the fridge for at least four hours, or until they are set. You can sprinkle the bars with cocoa powder and, if you want, chocolate shavings before serving. Enjoy your Spiked Mocha Mousse Bars by cutting them into bars.
