Delightful vanilla-mocha madeleines with a hint of coffee and cocoa flavors, perfect for tea time or as a sweet treat.
Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 2 eggs. 1/2 cup unsalted butter, melted. 1 teaspoon vanilla extract. 1 teaspoon instant coffee granules. 1 tablespoon cocoa powder. 1/4 teaspoon salt. 1/2 teaspoon baking powder.
Instructions: Warm the oven up to 350F 175C and grease the molds for the madeleines. Mix the eggs and sugar in a bowl and whisk them until they are fluffy and light. Mix the butter that has been melted and the vanilla extract into the eggs. Mix the cocoa powder, salt, baking powder, and instant coffee grounds in a different bowl. Mix the dry and wet ingredients together slowly until they are just combined. Fill each madeleine mold about three quarters of the way to the top with batter after the molds are ready. Place the madeleines in an oven that has already been heated. Bake for 10 to 12 minutes, or until the edges are lightly golden and the cookies bounce back when you touch them. After taking the madeleines out of the oven, let them cool for a few minutes in their molds before moving them to a wire rack to cool all the way down. If you want, you can sprinkle powdered sugar on top before serving.
