Ingredients: 8 oz macaroni pasta. 2 cups fresh spinach, chopped. 1 cup canned artichoke hearts, chopped. 2 cups shredded sharp cheddar cheese. 1 cup grated Parmesan cheese. 2 tablespoons butter. 2 tablespoons all-purpose flour. 2 cups milk. 1/2 teaspoon garlic powder. Salt and pepper to taste. 1/4 cup bread crumbs optional.
Instructions: Preheat oven to 375F 190C. Cook macaroni pasta according to package instructions until al dente. Drain and set aside. In a large saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until lightly browned. Gradually whisk in milk, stirring constantly until smooth and thickened, about 5 minutes. Add garlic powder, salt, and pepper to the sauce, then stir in 1 1/2 cups of shredded cheddar cheese and 1/2 cup of grated Parmesan cheese until melted and combined. Fold in chopped spinach and artichoke hearts until well distributed throughout the sauce. Add cooked macaroni to the sauce and mix until evenly coated. Transfer the macaroni mixture to a greased baking dish. Sprinkle remaining cheddar cheese and Parmesan cheese on top. If desired, sprinkle bread crumbs evenly over the cheese layer. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden brown on top. Serve hot and enjoy!
