While still being creamy, flavorful, and filling, this lighter version of broccoli and cheese soup is a healthier take on the classic dish.
Ingredients: 1 head broccoli, chopped. 1 onion, diced. 2 cloves garlic, minced. 2 cups low-sodium vegetable broth. 1 cup low-fat milk. 1 cup shredded reduced-fat cheddar cheese. 2 tablespoons olive oil. 2 tablespoons all-purpose flour. Salt and pepper to taste.
Instructions: In a large pot, heat olive oil over medium heat. Add onion and garlic, saut until softened, about 5 minutes. Stir in flour and cook for 1-2 minutes until lightly browned. Gradually whisk in vegetable broth and milk, stirring constantly until smooth and thickened. Add broccoli, cover, and simmer for 10-12 minutes until tender. Using an immersion blender, blend soup until smooth or transfer to a blender in batches. Stir in shredded cheese until melted and incorporated. Season with salt and pepper to taste. Serve hot, garnished with additional shredded cheese if desired.
