These Pesto Chicken Sandwiches are bursting with flavor, combining juicy grilled chicken with the rich taste of pesto, creamy provolone cheese, fresh tomatoes, and spinach, all nestled between two soft sandwich rolls.
Ingredients: 4 boneless, skinless chicken breasts. Salt and pepper to taste. 1/2 cup pesto sauce. 4 slices provolone cheese. 4 sandwich rolls. 1 tomato, sliced. 1 cup fresh spinach leaves.
Instructions: Preheat grill to medium-high heat. Season chicken breasts with salt and pepper. Grill chicken for 6-8 minutes per side or until cooked through. During the last few minutes of grilling, top each chicken breast with a slice of provolone cheese. Spread pesto sauce on the bottom half of each sandwich roll. Layer grilled chicken with cheese on the rolls. Top with tomato slices and fresh spinach leaves. Cover with the top halves of the rolls. Serve immediately and enjoy!
