Ingredients: 1 medium spaghetti squash. 4 slices of bacon, chopped. 2 cups fresh spinach. 1/2 cup crumbled goat cheese. 2 cloves garlic, minced. Salt and pepper to taste. Olive oil for drizzling.
Instructions: Set the oven temperature to 400F 200C. Scoop out the seeds after cutting the spaghetti squash in half lengthwise. Season the squash with salt and pepper and drizzle it with olive oil. After placing the squash halves cut-side down on a baking sheet, roast them for 40 to 45 minutes, or until the flesh is fork-tender. Cook the chopped bacon in a skillet over medium heat until crispy while the squash roasts. Bacon is removed, then drained on paper towels. Add the minced garlic to the same skillet with the bacon drippings and cook for about 1 minute, or until fragrant. Add the fresh spinach to the skillet and cook for 2 to 3 minutes, or until it wilts. After the squash is cooked, scrape the flesh into spaghetti-like strands using a fork. Transfer the threads into a bowl. Toss the cooked bacon and sauted spinach with the spaghetti squash.
