These baked apples are simple to make and come with a tasty cinnamon nut stuffing. They are a comforting and filling vegan dessert. They're great for fall or any time you want a warm treat.
Ingredients: 4 large apples. 1/2 cup chopped nuts such as walnuts or pecans. 1/4 cup raisins. 2 tablespoons maple syrup. 1 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground ginger. 1 tablespoon vegan butter, melted. 1/2 cup apple juice or water.
Instructions: Preheat the oven to 375F 190C. Core the apples, leaving the bottom intact, and scoop out some of the flesh to create a cavity for the stuffing. In a bowl, mix together chopped nuts, raisins, maple syrup, cinnamon, nutmeg, ginger, and melted vegan butter until well combined. Stuff each apple with the nut mixture, packing it tightly. Place stuffed apples in a baking dish and pour apple juice or water into the bottom of the dish. Cover the dish with foil and bake for 25-30 minutes, or until the apples are tender. Remove the foil during the last 10 minutes of baking to allow the tops of the apples to brown slightly. Once baked, serve the apples warm, optionally with a drizzle of maple syrup or a scoop of vegan ice cream.
