Savory chicken crepes filled with tender chicken, earthy mushrooms, and nutritious spinach, all wrapped in a delicate crepe and baked to perfection with gooey melted cheese.
Ingredients: 2 boneless, skinless chicken breasts. Salt and pepper to taste. 2 tablespoons olive oil. 1 cup sliced mushrooms. 2 cups fresh spinach leaves. 1 cup shredded mozzarella cheese. 4 large crepes.
Instructions: Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken breasts until browned and cooked through, about 6-8 minutes per side. Remove from skillet and set aside to cool slightly. In the same skillet, add sliced mushrooms and cook until tender, about 4-5 minutes. Add fresh spinach leaves to the skillet and cook until wilted, about 2 minutes. Slice cooked chicken breasts into thin strips. Place a crepe on a flat surface and sprinkle some mozzarella cheese over it. Add some chicken strips, mushrooms, and spinach over the cheese. Roll up the crepe and place it seam side down on a baking dish. Repeat with remaining crepes and filling. Sprinkle additional mozzarella cheese over the crepes. Bake in a preheated oven at 350F 175C for 10-12 minutes, or until the cheese is melted and bubbly. Serve hot and enjoy!
