This Shrimp and Spinach Stuffed Salmon recipe is a delightful combination of flavors and textures. Tender salmon fillets are filled with a savory mixture of spinach and shrimp, creating a dish that's elegant enough for a special occasion yet easy enough for a weeknight dinner.
Ingredients: 2 salmon fillets. 12 large shrimp, peeled and deveined. 2 cups fresh spinach, chopped. 2 cloves garlic, minced. 1 tablespoon olive oil. Salt and pepper to taste. 1 lemon, sliced for garnish.
Instructions: Preheat oven to 375F 190C. In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper. Slice a pocket into the side of each salmon fillet, being careful not to cut all the way through. Stuff each salmon fillet with cooked spinach mixture and shrimp. Season the stuffed salmon with salt and pepper. Place stuffed salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until salmon is cooked through and shrimp are pink and opaque. Garnish with lemon slices before serving.
