These vegan quinoa spring rolls are a colorful and nutritious appetizer or light meal. Packed with fresh vegetables, protein-rich quinoa, and crunchy peanuts, they are perfect for a refreshing snack or party dish.
Ingredients: 1 cup cooked quinoa. 8 rice paper wrappers. 1 cup shredded purple cabbage. 1 large carrot, julienned. 1 cucumber, julienned. 1 avocado, thinly sliced. 1/4 cup fresh cilantro leaves. 1/4 cup fresh mint leaves. 1/4 cup roasted peanuts, chopped. Dipping sauce of choice such as sweet chili sauce or peanut sauce.
Instructions: Get all of your ingredients ready and set them up in a line. Put warm water in a big, shallow dish. For a short time, dip one rice paper wrapper into the warm water to make it soft and bendable. Open the package and place it flat on a clean surface. In the middle of the wrapper, put a small amount of quinoa. Then, add some shredded cabbage, carrot, cucumber, avocado slices, cilantro, mint leaves, and chopped peanuts. To make a burrito, fold the sides of the wrapper over the filling and then roll it up tight. Do it again with the rest of the wrappers and filling. You can serve the spring rolls with any sauce you like.
