Vietnamese spring roll sushi combines the fresh, vibrant flavors of Vietnamese spring rolls with the convenient, handheld format of sushi. It's a delightful fusion dish that's perfect for a light meal or appetizer.
Ingredients: 8 rice paper wrappers. 8 large shrimp, cooked and peeled. 1 carrot, julienned. 1 cucumber, julienned. 1 cup cooked vermicelli noodles. 8 lettuce leaves. Handful of fresh mint leaves. Handful of fresh cilantro leaves. 8 rice paper wrappers. Dipping sauce hoisin sauce, peanut sauce, or fish sauce.
Instructions: Soak rice paper wrappers in warm water until pliable. Lay a damp kitchen towel on a flat surface. Place one rice paper wrapper on the towel. Arrange a lettuce leaf on the lower third of the wrapper. Top with a spoonful of vermicelli noodles. Add a few strips each of carrot and cucumber. Place a shrimp on top, followed by mint and cilantro leaves. Fold the sides of the wrapper over the filling. Roll up tightly, tucking in the sides as you go. Repeat with remaining ingredients. Serve with dipping sauce of choice.
