It’s definitely a soup kind of weather. A bowl of spicy coconut and squash soup fits the bill quite nicely—the zing of ginger is nicely rounded up by the creaminess of coconut milk. It is luscious with roasted acorn squash, but I think next time I’ll add another kind of squash to balance the sweetness.
