If Kheru Spellsnatcher dies after its ability has resolved and the spell is in exile, can the player still cast that card at a later point even though Spellsnatcher is dead?

Yes.

The ability to cast the spell is part of the effect of Spellsnatcher’s “when ~ is turned face up” trigger and isn’t tied to the Spellsnatcher herself once the ability goes on the stack.
