Vegetable Noodle Soup
Ingredients:
2 tbsp extra-virgin olive oil
1 rib celery, sliced
1 medium carrot, sliced
1 clove garlic, smashed
¼ medium onion
¼ tsp kosher salt
1/3 cup orzo or other small pasta or egg noodles or broken up spaghetti
4 cups low-sodium chicken broth
Small handful fresh parsley leaves, basil or dill, chopped
½ lemon, juiced
Freshly ground black pepper
Method:
· Heat the olive oil in a medium saucepan over medium heat.
· Add all the vegetables, garlic and onion and season with the salt, and cook until tender, about 6 minutes.
· Add the pasta and cook until slightly toasted and golden, about 2 minutes.
· Add broth, and bring to a boil over high heat. Cook, covered, until pasta is just tender, about 8 minutes.
· Stir in whatever herb suits you and lemon juice and season with pepper and additional salt, to taste.
· Fill thermos, pack in a lunch sack with crackers and cheese sticks and send off to school.
Salmon with Lemon, Capers, and Rosemary
Ingredients:
4 salmon fillets
¼ cup extra-virgin olive oil
½ tsp salt
½ tsp freshly ground black pepper
1 tbsp minced fresh rosemary leaves
8 lemon slices
¼ cup lemon juice
½ cup marsala wine
4 tsp capers
4 pieces of aluminum foil
Method:
· Brush top and bottom of salmon fillets with olive oil and season with salt, pepper, and rosemary.
· Place each piece of seasoned salmon on a piece of foil large enough to fold over and seal.
· Top the each piece of salmon with 2 lemon slices, 1 tbsp of lemon juice, 2 tsp of wine, and 1 tsp of capers.
· Wrap up salmon tightly in the foil packets.
· Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
· Place the foil packets on the hot grill and cook for 10 minutes for a 1-inch thick piece of salmon. Serve in the foil packets.
Steak Pizzaiola
Ingredients:
1 ¼ pounds boneless sirloin steak Kosher salt
2 tbsp extra-virgin olive oil
4 cloves garlic, smashed
1 large onion, sliced 1/4 inch thick
2 bell peppers
4 jarred pepperoncini, drained and thinly sliced
1 15 -ounce can crushed tomatoes
½ tsp dried oregano
Pinch of red pepper flakes
2 tbsp chopped fresh parsley
Focaccia, for serving
Method:
· Sprinkle the steak all over with ¼ tsp salt.
· Heat the olive oil in a large skillet over medium-high heat.
· Add the steak and sear until browned, about 2 minutes per side. Now transfer to a plate.
· Add the garlic to the skillet and onece it sizzles, add the onion and bell peppers and cook, stirring occasionally, until they soften slightly, about 4 minutes.
· Add the pepperoncini, tomatoes, oregano, red pepper flakes and 3/4 cup water and stir to combine.
· Bring to a rapid simmer, then nestle the steak in the sauce and simmer, turning once, until medium rare, about 7 minutes.
· Transfer the steak to a cutting board and let rest about 5 minutes. Continue simmering the sauce until thickened, about 3 more minutes.
· Thinly slice the steak against the grain and divide among plates. Top with the sauce and parsley. Serve with focaccia.
