These Low Carb Steak Fajita Roll-Ups are a delicious and healthy alternative to traditional fajitas. Tender slices of flank steak are filled with flavorful bell peppers and onions, then baked to perfection. Serve them wrapped in crisp lettuce leaves for a low-carb, gluten-free meal.
Ingredients: 1 lb flank steak, thinly sliced. 1 red bell pepper, thinly sliced. 1 green bell pepper, thinly sliced. 1 onion, thinly sliced. 2 cloves garlic, minced. 2 tbsp olive oil. 1 tsp chili powder. 1 tsp cumin. Salt and pepper to taste. Lettuce leaves, for wrapping.
Instructions: Warm the oven up to 190C 375F. Sliced flank steak, olive oil, chili powder, cumin, salt, and pepper should all be mixed together in a bowl. Well mix to cover the steak all over. Place the flank steak slices on a baking sheet. Then, spread the sliced onions and bell peppers evenly over each slice. Put peppers and onions inside each steak slice and roll them up. Tack it down with toothpicks if you need to. Put the roll-ups on a baking sheet that has been lined with parchment paper, seam side down. Put the steak in an oven that has already been heated for 15 to 20 minutes, or until it's done the way you like it. Take them out of the oven when they're done and let them cool for a while. With care, take out the toothpicks and serve the steak fajita roll-ups that are wrapped in lettuce leaves.
