A hearty and tasty steak soup that is slowly cooked in a crock pot. It's great for a cold day meal.
Ingredients: 1.5 lbs beef stew meat, cut into bite-sized pieces. 1 onion, chopped. 3 cloves garlic, minced. 4 cups beef broth. 1 can 14.5 oz diced tomatoes, undrained. 2 cups frozen mixed vegetables. 1 cup sliced mushrooms. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and pepper to taste. 1/4 cup all-purpose flour. 1/4 cup water. 1 cup heavy cream.
Instructions: To make beef stew, put in a slow cooker beef broth, diced tomatoes, mixed vegetables, mushrooms, thyme, rosemary, salt, and pepper. There should be no leaks. Cook on low for 8 hours or high for 4 hours, until the beef is soft. Mix flour and water together in a small bowl until the mixture is smooth. Mix it into the slow cooker. Mix in the heavy cream by stirring it in well. Put the lid on top and cook on high for another 30 minutes, or until the soup gets thicker. Enjoy while hot!
