Strachan’s Homemade Ice Cream and Desserts - Dunedin, FL
“Popcorn, get your popcorn!” - I imagine a carnival barker beckons from inside Strachan’s, nestled in quaint Dunedin... only he means popcorn ice cream. It was my second stop in Dunedin on a trip to see my engaged bestie Lairyn. We walked over after dinner at Casa Tina (awesome TexMex and margaritas) around the corner. I couldn’t resist a scoop each of cotton candy and buttered popcorn (!) ice cream side by side, topped with mini gummy bears - perhaps my favorite candy topping of all time.
This hard packed ice cream in served in a parlour style scoop shop, with all your favorite standards, as well as novelties like buttered popcorn and “Smurf” - blue-dyed vanilla with fluffy white marshmallows. While the suggestion of a savory ice cream deterred some less-adventurous eaters, I was drawn to the featured buttered popcorn, which was balanced between sweet and buttery and was superbly smooth and creamy. I’ve never had a glass of cold milk with my popcorn, but I believe it would have a similar effect. Cotton candy was solid, and I felt like a little kid with gummy bears dancing on top of these carnie-approved flavors. This place is a gem, and walking distance from the lively Dunedin Brewing Company, should you enjoy a pint with your scoops!
Best Carrot Cake EVER!
I love carrot cake!! For years, I would drool over the slices of carrot cake in the cooler at Strachans, the local homemade ice cream shack near my parents' house. In addition to having fabulous ice cream, they also have the most delicious carrot cake! I have searched high and low for a recipe that would produce something nearly as divine... and lo and behold, I have found it! I've only made this twice before (for the past two Easters), but it has never disappointed. Last night, I had two boys banging on my front door for leftovers :).
Ingredients:
For the cake:
2 c granulated sugar
1/13 c vegetable oil
3 eggs (room temperature)
1 tsp vanilla extract
2 1/2 c plus 1 tbsp all-purpose flour
2 tsp ground cinnamon
2 tsp baking soda
1 1/2 tsp kosher salt
1 c raisins
1 c chopped walnuts
1 lb carrots, grated
1/2 c crushed canned pineapple
For the frosting:
3/4 lb cream cheese (room temperature)
1/2 lb unsalted butter (room temperature)
1 tsp vanilla extract
1 lb confectioner's sugar, sifted
Directions:
Preheat over to 350 degrees F. Butter 2 8-inch round cake pans, line with parchment paper, and butter/dust with flour.
For the cake:
Beat sugar, oil, eggs together (can use handheld mixer) until light yellow. Add vanilla. In another bowl, sift together 2 1/2 c flour, cinnamon, baking soda, and salt.
Add dry ingredients to wet. Toss raisins and walnuts in 1 tbsp of flour. Fold in carrots and pineapple. Add to batter and mix well.
Divide the batter equally between the two pans. Bake 55-60 minutes, or until a toothpick placed into the center comes out clean. Allow cakes to cool completely in pans set over a wire rack.
For the frosting:
Mix cream cheese, butter, and vanilla with a hand mixer until just combined. Add confectioner sugar and mix until smooth.
Place 1 layer, flat-side up on plate or cake pedestal. Spread frosting on with knife or offset spatula. Place second layer on top with rounded side up, and frost top and sides of cake.

Another great day!
Today, my parents took me to downtown Dunedin, known by some as Dogedin!
My mom's favorite ice cream place, Strachans, gives free doggy ice cream cones, and I got to have my first one!
It was so delicious that I was even willing to stand to eat it.
Afterwards, we went to Ozona Blue, and mom and dad had cheeseburgers and beer and we all sat out on the deck and got some sun.
