From a June 8, 2017 article by Susanna Forrest from the Atlantic. I was reading this book by Charles Duhigg on the Power of Habits and he mentions in WW2 when beef and pork had to get shipped to sustain the troops, what was left for the American public was the availability of offals (the soft organ foods like kidney, liver, tongue and others with recipes to boot) but also chevaline.... horse meat, Restaurants in the 40's were serving horse steaks for high end dining and horse burgers. After the war the U.S. "stopped" consuming the meat on the regular but still ship out from horse slaughter houses to places like Mexico and Canada. I don't put it past there is horse meat or bits in U.S. products today but that's just opinion not fact. Fact is people still consume horse meat somewhere and where there is a demand, there will be a supply. It's been going on for ages. I love Senene (longhorn grasshoppers) as much as the next Muhaya. My relatives used to send them to me when I lived outside Tanzania, and to date my father knows that bringing me a batch of Senene is an easy way to put a smile on my face. But...I had never seen them prepared from the living stage. Here a family friend shows me how to get Senene ready for the frying pan. I was thoroughly intrigued.
