These Super Healthy Strawberry Oatmeal Bars are a delicious vegan breakfast option packed with whole grains and fresh fruit. They're easy to make and perfect for meal prep!
Ingredients: 2 cups rolled oats. 1 cup whole wheat flour. 1/2 cup maple syrup. 1/4 cup coconut oil, melted. 1/4 cup almond milk. 1 tsp vanilla extract. 1/2 tsp baking powder. 1/4 tsp salt. 1 1/2 cups fresh strawberries, sliced.
Instructions: Set the oven to 350F 175C and heat it up. Rolling oats, whole wheat flour, baking powder, and salt should all be mixed together in a large bowl. Melt the coconut oil and add it to the dry ingredients. Then add the almond milk and vanilla extract. Mix everything together well. Put parchment paper inside an 8x8-inch baking pan. Two-thirds of the oat mix should be pressed into the pan's bottom. Cover the oat mixture in the pan with the strawberry slices. Spread the rest of the oat mixture over the strawberries and gently press it down to stick. When the top is golden brown, it's done baking. Before cutting the bars into squares, let them cool all the way in the pan. You can eat these Super Healthy Strawberry Oatmeal Bars for breakfast or as a healthy snack.
