Ingredients: 2 cups fresh strawberries. 2 ripe peaches. 1/4 cup maple syrup. 1 can full-fat coconut milk. 1/4 cup agar agar flakes. 1 teaspoon vanilla extract. Fresh mint leaves for garnish.
Instructions: Blend strawberries, peaches, and maple syrup until smooth. In a saucepan, heat coconut milk and agar agar flakes over medium heat until agar agar dissolves, stirring constantly. Remove from heat, stir in vanilla extract. Combine fruit puree with coconut milk mixture. Pour mixture into individual serving molds or glasses. Chill in the refrigerator for at least 4 hours, or until set. Garnish with fresh mint leaves before serving.
