Ingredients: 4 eggs. 1 cup spinach. 1/2 cup kale. 1/4 cup broccoli. 1/4 cup collard greens. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Spinach, kale, broccoli, and collard greens should all be washed and cut up. Set a pan on medium heat and add the olive oil. Put in the chopped vegetables and cook for three to four minutes, until they begin to wilt. Add the eggs to the pan with the vegetables that have been sauted. Add pepper and salt to taste. Stir the eggs every once in a while for about two to three minutes, or until they are scrambled and cooked to your liking.
