Blogmas Day 9!

Mince Pies!

Hey guys sorry today’s blogpost has been really late but here it is! I have decided to share with you my Mine pie recipe that I use every year! I personally have no idea what the original recipe was because i’ve adapted it so much in four years. But anyways let’s jump into it...

Mince pies are a stable Christmas snack and therefore as soon as December rolls around I'm in the kitchen baking away! Most people don’t like mince pies but still like mine? That's strange I know but I think it’s because i dont use so much filling.

Ingredients

170g Plain Flour

100g Butter

1Tbs Caster Sugar

1 Egg- Medium/Large (plus one for browning)

1 Jar of mince meat (I like to get the large ones from tesco :))

Extra’s

So first of all,I rub the butter and flour together with my fingers in a bowl until it resembles Breadcrumbs and then add 1 Tablespoon of Caster Sugar. Then once i have mixed through I like to add one egg instead of adding water to seal together the mixture. Once you have mixed it form a dough place it on a floured surface until its like a firm dough then leave in the fridge for 10 minutes.

After the ten minutes roll out your dough on a floured surface and cut out your circles then place them in your cake tray. Once you have 12 brown the pastry with the egg and then place half a teaspoon of mincemeat inside each one

For your lids you can either cut out Christmas shapes (I like to do Christmas Trees or stars :) ) Or you can cut out smaller circles and place them on top pressing the outsides together and sealing the sides. If you do decide to do the circles cut two slits in the lid so the air can get into the mincemeat. Whatever lid you use brown the tops with egg and place into a preheated oven at 180 degrees for 15 minutes.
