You will love these Cherry Cheesecake Stuffed Cupcakes because they have vanilla cupcakes, a creamy cheesecake filling, a sweet cherry pie topping, and a hint of graham cracker crust. They are great for any event as a dessert.
Ingredients: 1 box of vanilla cupcake mix. 3 eggs. 1/2 cup vegetable oil. 1/2 cup water. 1 cup cream cheese. 1/4 cup granulated sugar. 1 teaspoon vanilla extract. 1 cup cherry pie filling. 1/4 cup crushed graham crackers.
Instructions: Preheat your oven to 350F 175C and line a cupcake tin with cupcake liners. In a mixing bowl, combine the vanilla cupcake mix, eggs, vegetable oil, and water. Mix until smooth and well combined. Fill each cupcake liner halfway with the cupcake batter. In a separate bowl, mix together the cream cheese, granulated sugar, and vanilla extract until creamy and smooth. Place a spoonful of the cream cheese mixture on top of the cupcake batter in each liner. Add a spoonful of cherry pie filling on top of the cream cheese mixture in each liner. Top each cupcake with a sprinkle of crushed graham crackers. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the cupcakes comes out clean. Allow the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
