For those on a sugar-free, Paleo, or Keto diet, these homemade marshmallows are ideal. With just three basic ingredients, they are fluffy and simple to make.
Ingredients: 1 cup powdered erythritol or preferred keto sweetener. 3 tbsp grass-fed gelatin. 1/2 cup water.
Instructions: Place 1/4 cup water and powdered erythritol or your favorite sweetener in a mixing bowl. Mix thoroughly until the consistency resembles thick syrup. Pour the remaining 1/4 cup of water into a different bowl and then top it with the gelatin. Give it some time to blossom by letting it sit. Following the blooming process, gradually reheat the gelatin in a microwave or over a double boiler until it turns into a transparent liquid. Take care not to heat it too much. Pour the hot gelatin mixture gradually into the bowl containing the sweetener syrup, stirring all the while. Use a hand whisk or a low-speed electric mixer. Once the mixture is fluffy and stiff peaks form, increase the mixer speed to high and whisk for another 10 to 12 minutes. Grease a square baking dish with nonstick spray or coconut oil and line it with parchment paper. Using a spatula to spread it evenly, pour the marshmallow mixture into the dish that has been prepared. Let the marshmallows sit overnight or for at least four hours at room temperature. After the marshmallows have set, cut them into the desired shapes with a knife or cookie cutters. To keep the marshmallows from sticking, place parchment paper between the layers of an airtight container.
