How would your character court the person of their dreams?
Good question — I think she would have to notice them first... or rather, realise that they are indeed the person of her dreams. Going from a defaulted verse she does not have a specified love interest, Ashara was mostly just having flings and trying out little affairs while keeping herself at a distance. Both because her way of thinking was so influenced by the time she was at the Circle. No romance, no wedding, nothing. And later on as the Inquisitor, it's a rather lonely life when you're addressed as 'Your Worship'.
I think if Ahsara falls truly in love, she would be incredibly shy about it, but still, there would be her usual ways of showing affection. Leaving little gifts and trinkets, casual touches, but she would be more reserved about it. She would probably make a link between her situation and the tragic romance novels she loves, and probably write out long and even more tragic love letters that the other person wouldn't get to read - unless she died, of course. Because that's very romantic and tragic. So it's not direct courting; but one could deduce if she were to fall in love with someone by just judging how much she stumbles over words,
In the end, I think Ashara would need to be courted first, before she even dares to return said affection

Also a very good and difficult question — Ashara is both young, but also has seen enough death to not just keep that thought at bay.
Aside from the countless fights, even with dragons and against ancient magisters — and even then, it makes for a good story and adrenaline keeps her from thinking about dying —, there were two times she truly felt her mortality and that she might indeed die, and how terrified she was.
First time, when she stumbled out of the ruins of Haven after In Your Heart Shall Burn, badly hurt and not being able to even produce a flame to keep herself warm, not knowing if someone had survived, not knowing how to find them, and essentially being lost in the snowy mountains, almost passing out. Even though she kept going, the fear of dying alone there was something that she took a long time to shake after, and still is a source of nightmares years after. She was not invincible even as a mage, even as the Maker's Chosen.
The other time was during the events of Trespasser with the Anchor slowly becoming unstable. She had lived with the pain for some time and had accepted it as her own, as one might do with a chronic illness. However, with the Anchor slowly disintegrating her, she essentially had to watch herself die, without the possibility of getting healed. She knew that she would die from the Anchor, with Orlais and Ferelden screaming in her face, and hunting Solas meanwhile led her to have a nervous breakdown shortly after. She did consider cutting her arm off herself, but knew it was impossible, as the Anchor was still needed. And as such, she could only wait out to, essentially, die.
Ahsara fights hard to keep the thoughts of her mortality at bay. Especially with the fundamentals of her belief so much shaken due to the last events, especially in Trespasser, and not knowing as what to expect and believe in, the thought of death scares her immensely.
