Please Note! English is not my first language, so I did my best to translate this recipe into English. If you still have any questions - feel free to ask:)
Tart pastry (for 24-26cm/9.45"-10.24" tart mold): flour - 200g cold butter - 110g a pinch of salt sugar - 1 tsp one medium egg 2-3 tbsp of ice water
Sift the flour directly onto the cutting board or counter that you're using. You'll end up with a flour mountain. Make a hole in the middle of that mountain, add butter cut into small cubes, a pinch of salt and a teaspoon of sugar. Use the knife to cut the butter into the dry ingredients until the pieces of flour-coated butter become smaller and have the texture of coarse crumbs. Crack the eggs into the center of it, mix and start adding ice water gradually, kneading the pastry, so that the whole mass gathers and becomes smooth. Lightly sprinkle the pastry on both sides with flour, and then roll it out between two sheets of parchment paper to the desired size (the thickness of the pastry should be about 3mm). Gently put the pastry in a mold, use your fingers to drape it in and gently coax it into the corners to fill the tart tin, as opposed to pulling or stretching it. Drape the excess pastry outside the rim of the tart tin, then roll the rolling pin across the surface to cut the excess off and remove excess pastry. Prick the base with a fork. This allows steam to escape which stops the base from puffing up, so you have a nice smooth and not a bubbled base. Cover the bottom of the pastry with baking/ parchment paper, then fill with baking beads (or dried rice, or dried beans) instead to weigh it down. The purpose of these weights is to prevent the base from puffing up and the sides from collapsing inwards during this blind baking stage.
Bake in a preheated oven at 175-180C for 15 minutes, then remove the filling and bake another 10-15 minutes or until the edges are light golden. Leave it to cool in the mold until warm, and then carefully remove on a wire rack and leave it to cool completely. After that you can grease the bottom of the tart with a thin layer of melted milk chocolate and let the chocolate freeze completely (you can put it in the refrigerator).
Tart filling (pastry cream): 2 eggs 75g sugar a pinch of salt vanilla extract (optional) 2 tbsp corn starch 450-500ml milk 200ml 33% heavy cream
In a medium bowl, whisk together eggs and sugar just until pale yellow and creamy, then whisk in cornstarch and flour and add a pinch of salt. Set aside. In a medium saucepan, heat milk (it has to be warm, not hot). Gradually pour the warm milk into the egg mixture while simultaneously whisking constantly until smooth. Transfer mixture back into saucepan. Cook over medium-low heat, whisking constantly and vigorously so that the eggs won’t curdle, until mixture thickens. Remove from heat and transfer to a medium heatproof bowl. Press a piece of plastic wrap directly onto the surface of the pudding to prevent it from creating a ‘skin’. Let cool to room temperature, then refrigerate until chilled. When the custard is completely cool, whipe the heavy cream with a tablespoon of sugar until stiff peaks form and then mix with the custard (you can use a mixer for this as well). Now fill your tart with custard and add berries/ fruits you want:)

One of my favorite summer desserts is the fruit tart. Just a few layers of filling and you will get real perfection:
- classic sweet tart crust
- white chocolate (very thin layer)
- traditional vanilla custard
- fresh rhubarb jam
- fresh strawberry
Really looking forward to the season of blueberries, raspberries and peaches for new tarts
