This Almond Peach Galette has the sweet taste of ripe peaches and the nutty taste of almond meal. It's made with flaky puff pastry. It's a simple but classy dessert that shows off summer fruit beautifully.
Ingredients: 1 sheet of puff pastry. 4 ripe peaches, thinly sliced. 1/4 cup almond meal. 2 tablespoons granulated sugar. 1 tablespoon lemon juice. 1/2 teaspoon almond extract. 1 egg, beaten for egg wash. Sliced almonds for garnish. Powdered sugar for dusting.
Instructions: Before you start cooking, heat the oven to 375F 190C. Put the puff pastry sheet on a baking sheet that has parchment paper on it. Put almond meal, sugar, lemon juice, and almond extract in a bowl and mix them together. Spread the almond mixture out evenly on top of the puff pastry, making sure to leave some space around the edges. Put the peach slices on top of the almond mixture. Fold the puff pastry's edges over the peaches, making pleats as needed. Use the beaten egg to brush the edges of the dough. Put thin slices of almonds on top of the peaches. Put it in an oven that has already been heated up and bake for 25 to 30 minutes, or until the pastry is golden brown and the peaches are soft. Take it out of the oven when it's done and let it cool down a bit. Before you serve, sprinkle with powdered sugar.
