This summer galette is a delightful combination of sweet heirloom tomatoes, sharp cheddar cheese, and fragrant thyme, all nestled in a flaky, buttery crust. It's the perfect dish to showcase the vibrant flavors of the season.
Ingredients: 1 1/4 cups all-purpose flour. 1/4 teaspoon salt. 1/2 cup unsalted butter, cold and cubed. 1/4 cup ice water. 4-5 heirloom tomatoes, thinly sliced. 1 cup sharp cheddar cheese, grated. 2 tablespoons fresh thyme leaves. Salt and black pepper to taste. 1 egg, beaten for egg wash.
Instructions: In a food processor, combine the all-purpose flour and salt. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs. While pulsing, drizzle in the ice water until the dough comes together. Turn the dough out onto a floured surface and shape it into a disk. Wrap it in plastic wrap and refrigerate for 30 minutes. Preheat your oven to 375F 190C. On a floured surface, roll out the chilled dough into a circle about 12 inches in diameter. Transfer the dough to a parchment paper-lined baking sheet. Sprinkle half of the grated sharp cheddar cheese over the center of the dough, leaving about a 2-inch border. Arrange the thinly sliced heirloom tomatoes over the cheese. Sprinkle the fresh thyme leaves over the tomatoes and season with salt and black pepper. Fold the edges of the dough over the filling, creating a rustic, free-form galette. Brush the edges of the dough with the beaten egg for a golden crust. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the tomatoes are tender. Remove from the oven and sprinkle the remaining cheddar cheese over the top of the galette. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
