Fast food summer style with zucchini and tomatoes from the veggie patch... 15 minute zucchini 'spaghetti' with little tomatoes, capers and anchovy. Cook an onion in a generous amount of olive oil over a low heat, add 3 sliced garlic cloves and cook for a few minutes. Boil a kettle of water. Halve about 2-3 cups of cherry tomatoes. Add to the pan, cook over a low heat, add 3 or so anchovy fillets and a sprinkle of capers, season with s+p. Cook for 5 minutes. Meanwhile shred zucchini into bowl, cover with boiling water for a minute and drain.
