I love Uub.
Like, in concept, he's awesome. The human reincarnation of kid Buu. The possibility of moving the series away from being Saiyan focused. Brilliant. And then he shows up, like four times in the entire Franchise.

Hoping Dragon Ball Z: Kakarot has a post game we’re you can play as Uub
My biggest hope is that the game’s ending is on the last chapter of the original series, in the 28th World Martial Arts Tournament (Tenkaichi Budōkai), we’re Goku takes Uub, Kid Buu reincarnation, as his student.
In most games, where they reenact the history of Dragon Ball Z, they always left this part out, always ending with the defeat of Kid Buu and the end of the Majin Saga, but this game sure looks like they’re going to shown every bit of Dragon Ball Z.
Also, it will be very cool if they gave us the change to play as Uub and have Goku as the true secret final boss of his own game.
And considering that Dragon Ball Xenoverse 2 has an upcoming DLC all centered in Uub and the series finale, it seems more likely.
