From the wilds to plate. This is a nettle pâté. First pick your nettles, no gloves are needed if you grasp the leaves firmly. No doubt the origin of the phrase grasp the nettle. Using only young, fresh and unblemished leaves, blanch them in boiling water for one minute. Drain, squeeze out the excess water and place in a blender. Add garlic, walnuts and olive oil. Blend to a pesto like consistency. Enjoy this wild food with fresh crispy bread, pasta or cold meats.
