I work in a grocery store, and sometimes am put in charge of restocking the bakery aisle, where I put away hundreds of pounds of sugar and flour and cooking oil, and, sometimes, cake mixes. Which brings us to Swans Down Enriched Cake Flour, which claims to be “America’s Favorite Cake Flour Since 1894.”

Honestly, until I started working for America’s largest private employer, I’d never heard of Swans Down Enriched Cake Flour. Hard to believe it’s been America’s favorite for more than a century. 

It’s hard to explain the despair I feel when looking at this box cover. It looks like a photo from 1978, so drab and depressing. The cake itself looks dry as cardboard, as dense as all the dusky 4:35 afternoons of your childhood compressed into a singularity. Try as you might to swallow it down it remains stuck in your throat forever.
