Prinsesstårta
Made a prinsesstårta! It's my favourite cake :)
The raspberry jam layer kinda sank into the bottom cake layer but it was still DELICIOUS. That combo of cake, jam, custard, whipped cream and marzipan just can't be beaten :)
Aaah! It's semla season!! Now I live in London I'm determined to eat all the semlor I can find in the run-up to Easter. There are certainly enough Swedish cafés/bakeries around to keep me in fika for a while... This semla is from Smaka in Whitechapel. It was small but perfectly formed, and went very well with their excellent coffee.
It was my birthday earlier this month! Of course, I wanted to eat my favourite cake: prinsesstårta. Luckily, you can find pretty much anything in London, so I went to Bageriet and enjoyed a slice with a friend. It was a happy birthday indeed.

To round off a wonderful birthday weekend, I came back from Amsterdam to discover that my mum had made me a birthday cake! And not any just birthday cake, but my favourite cake of all time: a prinsesstårta! It's been my favourite ever since I became obsessed with Sweden and heard about it, and subsequently went to Sweden and ate some. You can buy mini ones at IKEA, but it's not the same...
This year the cake was featured on The Great British Bake Off, and I guess mum saw the longing in my eyes, because here is one of my very own. It means a lot because my mum isn't a baker, she has no interest in it at all. She made us birthday cakes as children, but I don't think she's ever particularly enjoyed it. Kudos to her, though, because it came out really well - it both looks and tastes amazing!

Hooray! Round 2 of Semlor and they came out super great! Soya cream worked nicely! Oh! It’s fun being half Swedish!
