Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 teaspoons baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 3/4 cup granulated sugar. 2 large eggs. 1 cup mashed ripe bananas about 2-3 bananas. 1 teaspoon vanilla extract. 1/2 cup buttermilk. For Cream Cheese Frosting:. 8 oz cream cheese, softened. 1/2 cup unsalted butter, softened. 4 cups powdered sugar. 1 teaspoon vanilla extract. Banana slices and chopped nuts for garnish optional.
Instructions: Warm up the oven to 350F 175C and put paper liners in a cupcake pan. Mix the flour, baking powder, baking soda, and salt together in a medium-sized bowl using a whisk. Put away. Put the softened butter and granulated sugar in a large bowl and mix them together until they are light and fluffy. One at a time, add the eggs and mix well after each one. Add the mashed bananas and vanilla extract and mix them in well. Slowly add the dry ingredients to the banana mixture, mixing them in with the buttermilk each time. Start with the dry ingredients and end with the buttermilk. Don't mix any further than that. The batter should be about two thirds of the way up each cupcake liner. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. Take the cupcakes out of the oven and let them cool in the pan for a few minutes. Then, move them to a wire rack to finish cooling. Get the cream cheese frosting ready while the cupcakes cool. To make it smooth and creamy, beat the softened cream cheese and butter together in a bowl. As you beat the frosting, slowly add the powdered sugar and vanilla extract. Keep beating until the frosting is well combined and has a smooth texture. Cover the cupcakes with the cream cheese frosting as soon as they are cool. To make the frosting design you want, you can use either a piping bag or a spatula. If you want, you can add banana slices and chopped nuts as a garnish.
