Sweet Boondi Sweet boondi is a classic Indian dessert made as an offering in Indian temples. The name, boondi, just means droplets and this dessert is in the shape of droplets. Cooked with besan or gram-flour, it has the most luscious texture- crispy on the outside, and moist from the inside. The batter made of gram flour, baking soda and water is sieved through a ladle with holes and then fried until crispy in ghee. Next, it is dipped in sugar syrup infused with cardamom and saffron to get a rich, aromatic dessert.
