I don't know about you, but when 3.30 comes around I usually want to reach for the chocolate or sugary snack.
That’s where these come in. Healthy. Packed full of nutrients. No added sugar (natural sugar all the way!), yet they satisfy my craving for sweet, chocolate goodness. And they're super easy to make!
If they are too dry and not clumping together, add more dates. Too sticky, add more nuts. Simple.
10 fresh dates, pitted - from your fruit shop, or at the supermarket in the fridge in the fruit and veg section
1/2 cup of assorted nuts - I used pistachios, raw peanuts, pecans and walnuts
2 tbs seeds - I used pepitas, sunflower and sesame
Put dates and nuts in a food processor. Mix until they start clumping together and the nuts are chopped up.
Mix in seeds and apricot. You can do this in the food processor also or by hand. I only have a tiny one and it wasn't up to the task once it was too sticky.
Make into balls the size you want. I like mine small, so I can have two!
Roll in cocoa if you want the chocolate component.
Add more seed and no nuts for a school lunch box alternative
Add different dried fruits; cranberries, raisins, paw paw etc. for a different flavour
Omit the chocolate if you don't like the cocoa. I made some with and some without
Add different flavours such as peppermint essence and coffee if you like these flavours
The possibilities are endless!
