Ingredients: 2 cups gluten-free all-purpose flour. 1 tsp ground ginger. 1 tsp ground cinnamon. 1/2 tsp ground nutmeg. 1/2 tsp ground cloves. 1/2 tsp baking powder. 1/2 tsp baking soda. 1/2 cup unsalted butter, softened. 1/2 cup brown sugar. 1/2 cup molasses. 2 large eggs. 1/2 cup unsweetened applesauce. 1/2 cup buttermilk. 1 tsp vanilla extract. For Cinnamon Frosting:. 1/2 cup unsalted butter, softened. 2 cups powdered sugar. 2 tsp ground cinnamon. 1/4 cup milk. 1 tsp vanilla extract.
Instructions: Preheat your oven to 350F 175C and grease a 9x13-inch baking sheet. In a mixing bowl, whisk together the gluten-free flour, ginger, cinnamon, nutmeg, cloves, baking powder, and baking soda. In another bowl, cream together the softened butter and brown sugar until light and fluffy. Add in the molasses and eggs, one at a time, mixing well after each addition. Stir in the applesauce, buttermilk, and vanilla extract until the batter is well combined. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter forms. Pour the batter into the prepared baking sheet and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. While the cake is cooling, prepare the cinnamon frosting by beating together the softened butter, powdered sugar, cinnamon, milk, and vanilla extract until smooth and creamy. Once the cake has cooled, spread the cinnamon frosting over the top. Cut into squares and serve. Enjoy your gluten-free gingerbread sheet cake with cinnamon frosting!
