Ingredients: 1 cup unsalted butter, softened. 1/2 cup granulated sugar. 2 cups all-purpose flour. 1/4 teaspoon salt. 1 teaspoon vanilla extract. Food coloring various colors.
Instructions: In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the vanilla extract and mix until well combined. Sift in the all-purpose flour and salt. Mix until the dough comes together. Divide the dough into equal portions, depending on how many colors you want to use. Add a few drops of food coloring to each portion of dough. Knead the dough until the color is evenly distributed. Roll out each colored dough portion into a rectangle or log shape. Layer the different colored doughs on top of each other to create a colorful stack. Gently press the layers together to adhere. Roll the layered dough into a tight log, using a piece of plastic wrap to help shape it. Refrigerate the dough log for at least 1-2 hours, or until firm. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Slice the chilled dough log into 1/4-inch thick rounds and place them on the prepared baking sheet. Bake for 12-15 minutes, or until the edges of the cookies are golden brown. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
