Day 3 AND 4

I forgot to share with you guys my taco creation from yesterday!

I chopped and sauteed little pieces of pineapple, avocado, zucchini, red bell pepper, onion and garlic. Wrapped all that in a tortilla goodness topped with sriracha sauce. SO GOOD.

So I have a bajillion tortillas which means I’m eating tacos. A lot of tacos. 

Yesterday was day one of tacopalooza.  My tacos consisted of sauteed onions, butternut squash (seasoned with cumin, cayenne, salt and pepper), spinach and eggs. It also had a little mozzarella cheese. 

Today, day two of tacopalooza: lentils seasoned with chilli powder, cumin, cayenne, salt and pepper sauteed onions, garlic, zucchini and red bell pepper.  topped with crumbled goat cheese and salsa.
