Ingredients: 1 lb ground beef. 1 small onion, diced. 1 red bell pepper, diced. 1 packet taco seasoning. 2 cups uncooked pasta. 1 can 14.5 oz diced tomatoes. 1 cup chicken broth. 1 cup shredded cheddar cheese. Salt and pepper to taste. Optional toppings: chopped cilantro, sliced jalapenos, sour cream, avocado.
Instructions: In a large skillet, cook ground beef over medium heat until browned. Add diced onion and bell pepper, cook until softened. Stir in taco seasoning until well combined. Add uncooked pasta, diced tomatoes, and chicken broth to the skillet. Stir to combine. Bring mixture to a simmer, then reduce heat to low. Cover and cook for 15-20 minutes, or until pasta is tender, stirring occasionally. Once pasta is cooked, sprinkle shredded cheddar cheese over the top. Cover and let it melt for a few minutes.
