You can eat these tall blueberry muffins for breakfast or as a snack. Every bite has a great crunch from the sugar coating, and the blueberries are juicy and full of fruity goodness.
Ingredients: 2 cups all-purpose flour. 1 cup granulated sugar. 1/2 cup unsalted butter, melted. 2 large eggs. 1/2 cup milk. 2 tsp baking powder. 1/2 tsp salt. 2 cups fresh or frozen blueberries. 1/4 cup granulated sugar for coating.
Instructions: Preheat your oven to 375F 190C and line a muffin tin with tall muffin liners. In a mixing bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt. In a separate bowl, beat the eggs, then add the melted butter and milk. Mix well. Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix; it's okay if there are a few lumps. Gently fold in the blueberries, being careful not to break them. Fill each muffin liner to the top with the muffin batter. Sprinkle a little granulated sugar on top of each muffin for the crisp sugar coating. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy your tall blueberry muffins with a delicious crisp sugar coating on top!
