Ingredients: 1 can 15 ounces black beans, drained and rinsed. 1/4 cup diced red onion. 1/4 cup diced tomatoes. 2 tablespoons chopped cilantro. 1 clove garlic, minced. 1 tablespoon lime juice. 1/2 teaspoon ground cumin. Salt and pepper to taste. Optional: 1 jalapeo, diced for extra heat.
Instructions: In a food processor, combine black beans, red onion, tomatoes, cilantro, garlic, lime juice, cumin, salt, and pepper. Pulse until smooth, scraping down the sides as needed. Taste and adjust seasoning as desired. If using jalapeo, add it to the food processor and pulse until well incorporated. Transfer the dip to a serving bowl.
