A tasty Cajun chicken dish made in a slow cooker with onions, bell peppers, and a thick, creamy sauce. It is served over fettuccine pasta.
Ingredients: 1 lb boneless, skinless chicken breasts, cubed. 1 onion, chopped. 1 red bell pepper, chopped. 1 green bell pepper, chopped. 3 cloves garlic, minced. 1 can 14.5 oz diced tomatoes. 1 cup chicken broth. 2 tsp Cajun seasoning. 1 tsp dried thyme. 1/2 tsp dried oregano. 1/4 tsp cayenne pepper. Salt and pepper to taste. 8 oz fettuccine pasta. 1 cup heavy cream. 2 tbsp cornstarch. Chopped fresh parsley for garnish.
Instructions: In a slow cooker, combine chicken, onion, bell peppers, garlic, diced tomatoes, chicken broth, Cajun seasoning, thyme, oregano, cayenne pepper, salt, and pepper. Cover and cook on low for 6-8 hours, or on high for 3-4 hours. About 30 minutes before serving, cook fettuccine according to package instructions until al dente. In a small bowl, mix heavy cream and cornstarch until smooth. Stir into the slow cooker. Cover and cook for an additional 30 minutes, or until sauce has thickened slightly. Serve the Cajun chicken over cooked fettuccine, garnished with chopped parsley.
